Council for Promotion, Research & Trade in Traditional Foods organised Global Traditional Food Summit, 2017 first of its kind at Indira Gandhi National Centre for Arts, Janpath, New Delhi. Prof. (Dr) Kamal Piyush, Dean FHTM along with the faculty and students participated in the program inaugurated by Padam Shri Awardee, Chef Sanjeev Kapoor the renowned celebrity & Judge of Masterchef, Chef of Khana Khazana, Food Food Channel. Various speakers spoke about the traditions of India with regard to Foods, the need to document the same for preserving it for the posterity and insulate the same from the fast food life system which is causing immense harm to our Traditional Food culture and society.
Chef Sanjeev Kapoor discussed the richness of Indian Food culture. He went on to explain the traditions, complexity and the benefits of the herbs spices etc. which are integral part of Indian Foods.The program was preceded by a Seminar wherein the researchers presented their works and findings and were well applauded for the content and interesting facts. Some of the subjects covered were Skill Development & Entrepreneurship in Traditional Food Processing including operators of Street Food and Restaurants, Skill Development, Entrepreneurship and Innovations in Traditional Foods, Traditional Indian Cuisine an Indian Perspective & Food Culture of India. On the whole a good learning and pleasant experience for the participant students.
